梳乎厘 Souffle
梳乎厘 Souffle

材料:
蛋白-3粒
幼糖-15g (准备两份)
蛋黄-2粒
无盐牛油-20g
牛奶-100g
中筋面粉-20g
糖粉-适量(洒在容器里)

用具:
咖啡杯、水杯、小碗都行,只要是瓦瓷就可以了~

做法:
1)容器需要用小刷子在内壁刷上薄薄一层牛油,再均匀洒上糖粉。这样可以让梳乎厘沿着内壁烤发得很高。
2)牛油放入锅中,开小火煮溶。加入面粉拌均再加入牛奶边煮边搅至没有粉粒,再加入15g幼糖煮至有纹路成为面粉糊,离火待凉。
3)蛋黄打发至颜色变淡与面粉糊混合待用。
4)蛋白用中速度打至发泡,转快速度分次加入15g幼糖打发至7-8分硬挺的蛋白糊。
5)取打发好的1/3蛋白糊加入蛋黄面糊中慢慢轻手搅拌均匀。再把剩余的继续加入轻手拌均。
6)把面糊倒入已刷牛油及糖粉的杯中9成滿。
7)放入预热180°c烤箱,烤约15-20分钟即可。
8)出炉后快速洒上糖粉装饰及趁热享用。

准备材料

牛油隔热水煮溶

加入面粉拌均
搅拌面粉
加入牛奶

边煮边搅至没有粉粒

再加入15g幼糖

煮至有纹路成为面粉糊,离火待凉

蛋黄打发至颜色变淡

倒入面粉糊

混合待用

打发蛋白糊

取打发好的1/3蛋白糊加入蛋黄面糊中拌均

再把剩余的继续加入轻手拌均

把面糊倒入已刷牛油及糖粉的杯中9成滿

烘烤的时候梳乎厘一直向上爬得高高哦~

梳乎厘 Souffle出来咯~!!

Ingredients:
3 egg whites
15g castor sugar (prepare 2 portions)
2 egg yolks
20g unsalted-butter
100g milk
20g plain flour
icing sugar for topping

Tools:
Coffee cup, glass or small bowl

Method:
1) Grease the souffle cups with a little butter and sprinkle some icing sugar, pour away the excess. 
2) Melt the butter with sitting on hot water. Once melted, add the sifted flour and mix well. Try to get rid of all the flour lumps. Add the milk and mix well. Next add the 15g castor sugar, the mixture should become a bit thicker like a paste consistency then set aside and let it cool.
3) Whisk the egg yolks on low speed until the colour lightens to a cream colour. Add in the flour paste and mix with a spatula.
4) Beat the egg whites, when they are small bubbles, we can add in a little sugar at a time. Beat until stiff peaks.
5) Add about 1/3 of the whites into the egg yolks mixture by gently mixed well. Add in the rest and mix until the mixture is thoroughly mixed.
6) Spoon the mixture into the souffle cups until they are about 90% full.
7) Pre-heated oven, bake the souffles at 180 celcius for 15-20 minutes.
8) Sprinkle a little icing sugar on the top for decoration and serve.
