北海道杯子蛋糕 Hokkaido Cupcakes

蛋糕体材料:
蛋黄 4粒
蛋白 4粒
白幼糖 30克 & 20克
玉米油 35克
低筋面粉 80克
牛奶 40克

蛋糕体做法:
1)先用打蛋器稍微打散蛋黄,把20克白幼糖分2-3次加入搅拌均匀。
2)加入玉米油搅拌均匀,再加入牛奶搅拌均匀。
3)把低筋面粉过筛加入拌均成蛋黄面糊备用。
4)准备另一个mixing bowl用hand mixer打发蛋白。分3次加入30克的白幼糖打至湿性发泡。(把碗倒转,蛋白霜不会滑落)
5)用橡皮刀捞出(4)蛋白霜分3次加入(3)蛋黄面糊里面轻轻搅拌均匀。(不要太用力,否则蛋白霜里的气泡会没有掉。)
6)把面糊倒入杯子里70%满,轻敲一下把空气敲出。
7)烤箱预热180度25分钟,烘烤170度大约30分钟。

奶油馅材料:
植物性鲜奶油 120克
白幼糖 15克
即食蛋黄粉 20克
冷牛奶 60克

奶油馅料做法:
1)用Hand Mixer快速拌打植物性鲜奶油一下,加入白幼糖拌打成有点像yogurt的状态备用。
2)即食蛋黄粉混合冷牛奶快速搅拌均匀。
3)把(2)面糊混合进(1)的鲜奶油拌打至发泡。
4)把打发好的奶油馅料装进挤花袋挤进蛋糕体中间。(蛋糕体稍微冷却才挤)
5)洒上适量糖粉在蛋糕体上面,放入冰箱2个小时后即可享用。

以下是英文版本,本人的英文是有限公司~任何不妥之处请多多包含。

Ingredients (cupcakes)

4 Egg yolks
4 egg whites
30g & 20g castor sugar
35g corn oil
80g Superfine flour
40g Milk

Method (cupcakes)
1) beat the egg yolk, scoop 1/3 of 20g castor sugar into the yolk batter n beat well. Continue pour in the remaining castor sugar, well beaten

2) add in corn oil into (1), beat well. Add in milk, well beaten.

3) sieve the superfine flour into the (2) and mix well. Set aside.

4) prepare another mixing bowl for the egg whites, use the hand blender on high speed to beat the egg whites until foamy. Scoop 1/3 of 30g castor sugar n blend well. Continue pour in the remaining castor sugar n blend well. (Blend until stiff peak)

5) scoop 1/3 of ingredients (4) into ingredients (3), mix well by spatula by gently. Continue the rest n mix well.

6) scoop the batter into cupcakes holders until 70% full. Tap the holder lightly to remove excessive air pockets.

7) bake in oven 170° for 30mins. (pre-heat oven 180° for 25mins).

Ingredients (filling):
Non-dairy fresh cream 120g
Castor sugar 15g
Instant custard powder 20g
Cold milk 60g

Method (filling):
1) blend the fresh cream by using hand blended on high speed for a while. Add in castor sugar blend til the cream texture is looked like 'yogurt'. Set aside.

2) pour instant custard powder into the cold milk n beating in fast speed til creamy.

3) combine the ingredients (2) into the ingredients (1), blend until stiff.

4) pour into the piping bag n pipe the cream into the middle of the cupcakes.

5) Dust with icing sugar and refrigerated before consume.
